Carrot Juice

Carrots are one of the greatest juicing vegetables.  They are easy to handle, and juice well with all types of juice machines.  Carrots are on my list of  five basic juicing ingredients.

In addition to being one of the better tasting juices, carrot juice is rich in carotenoids, which are the antioxidants that have earned this superfood it’s good reputation.

Juicing carrots provides even greater benefits.  When you eat a raw carrot, your digestive system only extracts about three percent of its vitamin A content.  Since raw carrots are hard to digest, most of the beneficial nutrients remain locked in.  But, when you juice a carrot you extract substantial amounts of vitamins and minerals locked within the fiber of the carrot.
